Apple Cinnamon Pancakes

So it has been quite a while since my last post.  I moved to a new apartment and didn’t really try any new recipes for a while, and now that I’m settled I started trying some new things again.  This time around is pancakes with apple and cinnamon, it was the first time I made pancakes from scratch (which is surprisingly easy – I don’t think I’ll be buying a premade pancake mix any time soon).  Just some flour, baking powder an egg, milk and some butter for the basic pancake and an apple and cinnamon for the added flavor part.  

I put the apple through a food processor to shred it up.  In hindsight I probably should have peeled it first, the skin didn’t go great in a pancake.

In my new apartment I don’t have a microwave so melting butter would have required use of another pot on the stove and cleaning another thing by hand because my new apartment also does not have a dishwasher.  So I improvised and melted the butter in my sink using hot water.

It only took a couple minutes… Next step was combining all the ingredients to make the batter.

You can see the cinnamon!  After this it’s time to scoop some into a hot pan and cook the pancakes.

 You flip them when you can see the air bubbles forming.

The final product.  I ended up with three 7-8″ pancakes.  Top with some butter and syrup and dive in.  These came out pretty good, could have used less apple – but that’s probably because the original recipe was for 4- servings and I only wanted 2 and my adjustments weren’t thought out too well.  And really who is going to use 1/2 an egg?  Next time around I might make some real buttermilk pancakes…


Recipe:

-1/4 cup butter, melted
-1 egg
-1 cup milk
-1 cup shredded apple
-1.25 cups flour
-1.25 teaspoons baking powder
-1/2 teaspoon cinnamon
-1 tablespoon sugar

Combine butter, milk and apple.  In a separate bowl sift together flour, baking powder, cinnamon and sugar.  Stir flour mixture into apple mixture until combined (lumpy is fine).

Heat a skillet on medium high heat.  Spoon out enough batter for your desired pancake size.  When bubbles are forming flip pancake and brown on both sides.  Continue until there is no more batter.
